Pour the mixture into a bowl, then add 100g melted butter and 30g water. Mix until smooth and creamy. Preheat the oven to 180°C and roll out the puff pastry to a diameter of 24cm. Spread the cream, leaving a 3cm border. Add the fava bean! Cover the disk with puff pastry of the same diameter, pressing down to seal the edges. Glaze with a mixture of beaten egg yolk and 1 tbsp water. Make a small hole in the center of your galette before placing in the oven. Bake at 180°C for 30 minutes.
