Préparation des palmiers :
- Mix the brown sugar and vanilla sugar thoroughly in a small bowl.
- Unroll your puff pastry and sprinkle evenly with the vanilla sugar.
- Fold each end inwards: first once, then twice, until the two sides almost touch in the middle, adding a little sugar after each fold.
- Sprinkle with sugar again and fold the two sides over each other this time.
5. Using a large knife, cut slices approximately 1 cm wide and place them cut-side up on a baking tray lined with baking paper.
6. Leave the palmiers to rest for 30 minutes at room temperature, then bake for 20 minutes in an oven preheated to 190°C: PLEASE NOTE, baking is done in two stages (2 x 10 minutes), turn them over halfway through cooking for an even colour.
7. Once the palmiers are baked, leave them to cool, gently melt the white chocolate and crush the pink pralines.
8. When the palmiers are cool, dip one end in white chocolate and sprinkle with crushed pink pralines. Leave to set.
