Used in cakes, galettes des rois (a puff pastry pie filled with frangipane), as a topping or as a decorative touch, dried fruit and nuts are a welcome addition to both sweet and savoury recipes and can be used in a variety of ways, making them ideal for all manner of bakes.

Let’s start with almonds, the star ingredient in the traditional French galette des rois, which is shared by family and friends on Twelfth Night.

Almonds also star in financiers and dacquoises, or can be sprinkled on salads and porridge.

Its cousins — hazelnuts, macadamia nuts, pecans and Dordogne walnuts (delicious walnut kernels) — are particularly popular roasted in slivers, used in tarts and cakes, and in American classics, such as brownies, cookies and cheesecakes to provide an original crunchy texture!

What’s our secret? We like to mix them with other yummy ingredients like chocolate, caramel and honey to create ever more original and delicious recipes!

Talking of originality, how about adding a dash of exoticism with our coconut macaroons, coconut energy bars or coconut Swiss roll cake? Ideal for introducing your children to new flavours from around the world.

Want to add a touch of colour? Try using green pistachio nuts, which blend beautifully into cakes and biscuits, or use them chopped in icing or as a cake decoration.

For lovers of sweetness, try sultanas with their sweet flavour and soft, melting texture. Use them in cakes, tarts or a fruit salad to showcase their legendary sweetness.
The same goes for the sultana’s cousin, the Agen prune (what a great family dried fruit is!). Make a French prune tart or add a handful of prunes to a muffin or a crumble for a guaranteed sweet, tangy touch!
